how about like, tuna or chicken salad on crackers? that could be pretty healthy.

also, try maybe pasta salad. its quick to throw together and you can control everything you add in. i like mine with red peppers and chicken with balsamic vinegar and paremesan cheese.

Are you wanting something to take on the trail with you or lunch at work? I have alot of recipes for many different pasta and other dishes. Let me know what kinda lunches you want or need and I'll see what I can come up with.

cheezeburger -WKU, I am gonna beat you up...LOL

I am just so tired of eating the same thing at lunch time. I like tuna and chicken on crackers - just haven't eaten that in a while. I also love pasta.

Any other ideas would be great!

Grill or bake a bunch of chicken breast at once and cook up a bunch of brown rice. You can have Chicken and brown rice for lunch until you get tired of it.

Well.....The chicken and brown rice isn't a bad idea. You can go out and buy (or make) several different vinegrettes and marinade your chicken in them. Just to add some variety. That's a quick one.
But! There are soooo many things you can do the night before in just 15 minutes that'll give you a lunch that will be the envy of your entire office.
Salads for instance...boring eh? But go out and get some fresh spring mix, stay away from iceberg lettuce...that shit sucks. Iceberg has no nutritional value...being around 150% water. But spring mix with some Mescal, Endive, mustard greens and a few other good lettuces will balance out nutrition and tastiness. Get a head of radicchio and sautee it with some olive oil just until it starts to wilt. throw in some dried crannberries...a few manderin oranges, some fresh avocado, maybe some toasted almonds or pine nuts, whatever other veggies you like. and top it off with some of that marinated chicken we talked about earlier and baddabing! I call that good.
Is there anything that you don't eat? Pork, red meat, ect? Let me know and I can fire off alot of things that you can cook up real easy. But I don't want to give you any pork recipes if you don't eat pork...I'm just lazy like that.
