This is a question for all you backcountry gourmets. What do you carry in your herb/spice kit?

This is what I usually have, although I've been meaning to add some ginger and curry powder:

  • Salt
  • Black pepper
  • Lemon pepper
  • Paprika
  • Basil
  • Garlic powder
  • Ground cayenne pepper
  • Seasoned salt

To save space and weight, I put just a little more than enough into small 2"x3" zipper type bags and then label each one. Finally, I pack all of those into a Zip Lock snack size bag. I found the small bags at Hobby Lobby in Madison, TN. They are actually sold as jewelry bags, for anyone who may be interested.

It depends on what I plan on cooking, but usually at least:

-S&P
-Basil
-Garlic (fresh is best, but granulated or powder works fine.)
-Allspice
-Oregano
-Red curry paste
-Paprika
-Celery Seed
-Cumin
-Bay Leaves
-Saffron (yes, saffron)
-Ginger


That's a basic one, I have a whole spice cabinet and kitchen kit that I take with me when space allows, although the whole thing only takes up about 2L, so it's pretty compact.
Here's how I made it:
The spice kit goes in a 1.2L rubbermaid takealong container, using those same little bitty ziplocs. But for some spices, like Bay Leaves, celery seed, and whole cumin, as well as ginger. A little bit goes along way. So relying on your vestiges of misspent youths, use the corners of flip top sandwich bags tied off with a knot or twist tie, a la, a sackaweed
At most kitchen supply places you can find sets of small wooden spoons, which are useful for cooking and eating (multi-takers are the key)
So in this kit are:
-Spices (duh)
-itsy bitsy wooden spoons
-a small plane for grating stuff
-a small crock with a lid with LARD! (there is NO substitute pork fat rules)
-A bit of fresh citrus zest( if available)
-Small bottles with Redwine vinegar, and olive oil (E.V.)
-Local ingredients of wherever the hell I am; dried mushrooms, sundried tomatoes, peppers, ect. As well as fresh ingredients.

All in all it takes up a little but more than 2L and weighs maybe 18 or 19 ounces.

Oh, and there's a new product from Thirstea, a 4fl oz bottle of brewed tea concentrate that makes 3 gallons of tea.


My dad works for GFS (Gordon Food Service) Marketplace and that's where I found it.

That's funny, although I've been able to say the same during a few impromptu canoe trips.

gonzo, your full-size spice kit sounds impressive. I just can't convince myself that's it's worth it to carry that much because I'm one of those guys who tries to keep his entire pack around the 10 lb. mark. That somewhat limits me. While canoeing, however, it's a different story; I bring one of those small tabletop grills. I seem to eat better food during those trips than in normal, day-to-day life. I usually start canoeing in March, and it's almost here. I'm excited.

If I feel like living large, then I will carry this. The Ozark Trail Multi Spice Shaker. Available at any Wal-Mart. Or, by Coghlans, as I just found out.

Well, you can tone it down a bit to suit your needs...I'm a chef, so like I said, I like to eat gooood.
