I would like to get a beginner level kayak, nothing to expensive, just something to play around in and see if I even like it. Anyone have any suggestions? Also what about places to learn about kayaking...any sites?

It really kind of depends on what kind of kayaking you're wanting to get into but, pretty much any major outdoor store can help you choose what is right for you.If you're looking into recreational kayaking a Carolina kayak would be a good choice or a Jackson if you are leaning more towards whitewater kayaking. I think that http://www.outdoorplay.com/ would be helpful for you in finding a kayak. There is a tab on the their home page that says " New Paddlers". It has FAQ's about choosing the kayak, the paddle, the pfd, and any of your other questions you might have.

Look for a used one too. Or consider renting one for a while. I've run upon a few really good deals on ...well VERY used boats. But if it floats, it's a boat in my opinion.

If you possibly can, join a local club first, to see whether paddling might be for you. I joined a local BCU (British Canoe Union) certifed club this January, and with the use of their boats, paddles, buoyancy aids, training and encouragement I'm now a grade four qualified sea kayaker, and regular flat-water marathon racer.
My initial thoughts were the same as yours - get an average, beginner-level all rounder, maybe second-hand; but these thoughts quickly vapourised, having been encouraged to use dozens of different craft from a small fleet of trusty and capable "club" boats, plus some privately owned kayaks with the owners' blessing. These have included fast, skinny things, sea boats, plastic play boats, and even canoe-polo boats for learning rolls and rescues.
After trying all these boats, which one would I buy? I couldn't, as my love for different aspects of the sports are now too diverse. In an ideal world, a rotomoulded P&H Capella 17 for the sea, a carbon-kevlar K1 Kirton Tor for racing, plus a fast, stable K2 two man kayak for endurance events and adventure races. Maybe if I get a bit of spare time this winter I might have a dabble in some whitewater, so either a plastic playboat (or slalom boat) might have to go on the list too. And a surf-ski. It's endless.
In the meantime, my £40 BCU membership (for insurance), and my £20 annual club membership seems like the best recommendation I can make.

I realize that this is an old thread, but if you are still interested in information about kayaking...
I found a lot of info on Performance Video's website
